Wechua Culinary Heritage Foundation
The Wechua Culinary Heritage Foundation is a nonprofit cultural organization dedicated to preserving and promoting traditional Wechua foodways and agricultural practices in Nouvelle Alexandrie. It was founded in 1749 AN by Princess Phaedra, then a nineteen-year-old undergraduate studying cultural anthropology at the Royal University of Parap, and is headquartered in Rimarima. The foundation documents endangered recipes and food traditions such as chicha, supports traditional ayllu-based seed-preservation programs, and advocates for the recognition of Wechua cuisine as part of the nation's cultural heritage. It operates research centers in Rimarima, Humahuaca, and San Francisco that maintain living seed banks for traditional crops, among them over 1,200 potato varieties, ancient grains such as quinoa and kaniwa, and medicinal plants used in Wechua cooking and healing traditions. The San Francisco center gives particular attention to the distinct foodways of the coastal Wechua communities.
Princess Phaedra remains the foundation's founder and patron, personally conducting field research and documentation projects. Its documentation program records oral histories with elderly cooks and captures traditional preparation methods on video, maintaining a digital archive of recipes and food-related cultural practices alongside published studies of regional culinary knowledge. The foundation also runs training workshops for young chefs in techniques such as pachamanca pit roasting and partners with farmers' markets to widen access to heritage ingredients. Through Princess Phaedra, it collaborates with the National Gastronomy Institute of Nouvelle Alexandrie on programs teaching young people about Wechua culinary traditions. In 1753 AN, traditional Wechua agricultural methods were added to national agricultural education curricula following the foundation's advocacy. The organization receives funding from both the federal government's cultural programs and private donations, operating with an annual budget of approximately 2.4 million écus.
