The National Gastronomy Institute of Nouvelle Alexandrie is a federal educational and research institution dedicated to culinary arts, food science, and hospitality management. Established in 1688 AN by an act of the Cortes Federales as part of post-federation cultural integration efforts, the institute maintains three main campuses in Punta Santiago, Parap, and Cárdenas, with regional training centers in each of the Federation's twelve regions. The institute offers professional certification programs, associate degrees, and advanced culinary diplomas, training approximately 8,500 students annually in fields ranging from classical Alexandrian cuisine to contemporary food innovation. Its research division collaborates with the University of Cárdenas and Royal University of Parap on projects related to food safety, agricultural sustainability, and the nutritional applications of indigenous ingredients.

The institute operates under the supervision of the Department of Education and receives an annual federal appropriation of 38 million écus, supplemented by tuition fees capped at €1,800 per year and industry partnerships. Its faculty includes master chefs, food historians, and scientists who work to document and preserve regional culinary traditions while advancing modern gastronomic techniques. The institute's research center in Parap houses the Federation's most comprehensive collection of historical cookbooks and culinary manuscripts, including rare texts from the Alexandrian Empire and pre-federation Wechua Nation. The institute has gained recognition for its work training chefs who have opened restaurants across Micras, contributing to the international reputation of New Alexandrian cuisine.
